CONSTANT EVOLUTION
SEASONAL MENU
Starting in summer 2026, you’ll find two tasting menus that change and evolve with the seasons and the inspiration of our cuisine. The 7- and 5-course Pensiero e Gesto menu is joined by a 5-course, entirely vegetarian menu. Up to four guests can choose à la carte, 2 or 3 savory courses, drawing from the tasting menus.
A choice of three wine pairings completes our offering. Alternatively, the wine list is available.

AOSTA
In the magnificent setting of a city with a history spanning thousands of years, surrounded by Europe’s highest mountains, we are fortunate and privileged to be able to stock up on supplies at the city’s many local farmers’ markets every week. Thanks to partnerships and friendships cultivated over the years, we bring to your table what we consider the best of dairy products (Aosta – Antica Latteria Erbavoglio), agricultural and beehive products (Verrès – Apicoltura Corradi), as well as sustainable farms (Nus – Cascina Mathieu; Morgex – Azienda Agricola Pavese; Charvensod – Galline al Pascolo) and premium fish (Morgex – Troticoltura Spatari). Feathers and game are never missing from our cuisine, and we dedicate a special autumn menu to the Valle d’Aosta hunting season. We happily digress with dishes from our seas, ensuring variety and a true Italian spirit.
