PAOLO BARIANI
Before arriving at Vecchio Ristoro, Paolo had experiences abroad (Florida and Australia) and an important stint in Milan at Ristorante Cracco. He then moved to Courmayeur to work at Petit Royal, where he met Chef Filippo Oggioni. The two immediately struck up a perfect rapport, which led to the opening of Dandelion Cuisine de Montagne and subsequently to the decision to take the helm of Vecchio Ristoro in Aosta in 2019.

Since 2024, Daniele Corradi has been working alongside Paolo in the dining room and wine service, actively participating in selection and research.
At VR, we want to share our passion for wine through a constantly evolving menu, the fruit of many tastings and many glasses, hoping to engage you and make you participate. We serve wine exclusively, firmly believing that this age-old beverage elevates the restaurant’s gastronomic experience and redefines its boundaries at every meal. Wine is unique and geographical, it is tradition, it is the expression of the producer, the story of the vintage, a unifier of peoples, a facilitator of conversation, a sealer of great understanding: wine is culture, curiosity, and, above all, enjoyment. A natural consequence is the choice not to offer non-alcoholic, non-alcoholic fermented, dealcoholized, or low-alcohol pairings. Excellent water is always available as an alternative.
