PAOLO BARIANI

Before arriving at Vecchio Ristoro, Paolo had experiences abroad (Florida and Australia) and an important stint in Milan at Ristorante Cracco. He then moved to Courmayeur to work at Petit Royal, where he met Chef Filippo Oggioni. The two immediately struck up a perfect rapport, which led to the opening of Dandelion Cuisine de Montagne and subsequently to the decision to take the helm of Vecchio Ristoro in Aosta in 2019.

Since 2024, Daniele Corradi has been working alongside Paolo in the dining room and wine service, actively participating in selection and research.
Wine list is constantly evolving and explores regional, national, and international terroirs. Special attention is paid to small producers who are committed to sustainable viticulture and winemaking, while also showcasing notorious wineries that have historically been a benchmark for the most prestigious appellations. Wine pairing itineraries and the wide selection by the glass complement the restaurant’s culinary experience and allow guests to explore and sample a wide variety of wines.
